Snowman Cake Pops Recipe
1 box of white cake mix
1 16-ounce can white frosting
2 pounds white candy melts
20 lollipop sticks
1 box fruit roll-ups
edible ink markers
black candy writer
Cook cake as directed on box and cool completely, trim off sides and bottom (they tend to discolor the white balls) and crumble into large bowl.
Mix crumbles thoroughly with a little less than ½ can frosting, with a large spoon or your hands. Should be the texture of play-doh when completely mixed together. Add more frosting if necessary.
Roll mixture into quarter-size balls and place on wax paper-covered cookie sheet. For the snowman heads, roll balls slightly smaller than the body. One box of cake mix will make approximately 20 snowmen.
Chill balls for several hours to firm.
Melt candy coating in the microwave per directions on package. (30 sec intervals, stirring in between.) Use a deep bowl, with 3-4 inches of melted coating for dipping.
Dip the tip of your lollipop stick in a little of the melted candy coating and insert all the way through into the larger cake ball, with a little bit of the stick showing. Dip this tip into the candy coating again, then stick the head on.
Place into refrigerator or freezer to firm up.
Once firm, carefully insert the snowman into the melted candy coating by holding the lollipop stick and dipping and removing with one motion. Hold snowman over bowl to let excess coating drip back into bowl. Softly tap until excess drips off. Don’t tap too hard or the cake ball will fall off, too.
Place upright in a Styrofoam block to dry. Repeat coating procedure a second time. Let dry completely.
To decorate, cut a fruit roll-up into 4 or 5 strips. Wrap a strip around the snowman’s neck for his scarf.
Using a toothpick, carefully poke a hole for the nose, spinning gently. Insert the tip of the carrot sprinkle into the coating and then into the hole.
Draw two dots for eyes, and dots for the mouth with the edible black marker.
To add the earmuffs, dip a toothpick into the melted coating and place a dot on the side of snowman’s head. Immediately place a red m&m on coating. Crumple a clean dish towel or paper towel and gently lay snowman on his opposite side to hold him in place while the m&m dries to the head. The coating will act like a glue. This should only take a minute or two. Then repeat for the other muff. Use black candy writer for the headband. Follow directions on tube for melting.
